Y'all make Turkey weird. Low and slow is the best way. No need for silly brines. Flavour that biotch up, pop it in at 200 degrees, 4 hours in baste, recover, raise temp to 300 baste every hour for 2 hours, raise temp to 350, remove foil and baste every 20 to 30 minutes until temp is 150 eternally. Perfectly crispy, moist and perfectly seasoned ( in and out ) *Edit. When you season the bird, separate the skin from the breast and ram about a 1/2 lb of butter mixed with thyme, rosemary, salt, pepper, oregano, or whatever seasoning you like on your bird ) and rub the outside of the bird with the same butter mixture.
