Claire Saffitz Makes Confetti Cake | Dessert Person. Get ready to party! And by party, we mean stay at home and be safe. But fortunately, you need no special occasion to make this delicious, celebratory, kid-friendly, and deeply nostalgic confetti cake. A tender white birthday cake studded with rainbow sprinkles and covered in smooth, tangy cream cheese frosting, it tastes like childhood (which is to say, better than the box). We took a hiatus but Claire and her crew are back with Season II of Dessert Person -- check out this first episode!

Butter for the pans
5 1/2 cups cake flour (23.3 oz/ 660g)
2 1/2 cups sugar (16.4 oz / 466g)
4 1/2 teaspoons baking powder (0.63 oz / 18g)
1 1/2 teaspoons Diamond Crystal kosher salt (0.16 oz / 5g)
3/4 teaspoon baking soda
3 sticks unsalted butter (12 oz / 340g), at room temperature
1 1/2 cups buttermilk (12.7 oz / 360g)
1/3 cup neutral oil, such as vegetable or grapeseed (2.6 oz / 75g)
3 large eggs (5.3 oz / 150g), at room temperature
6 large egg whites (7.4 oz / 210g), at room temperature
1 tablespoon vanilla extract
1/2 teaspoon almond extract (optional)
1/2 cup store-bought rainbow sprinkles (3.3 oz / 93g), plus more for decorating

Dulce de Tres Leches!, it is very known in Ecuador. It is basically 1 layer of sponge cake soaked in 3 types of milk: regular, condensed, and evaporated. Decorated on top with meringue and slices of peaches in syrup. Very delicious.

Alright so I made the cake yesterday, and it is so dry... like breath to hard inhale crumbs and choke dry. So be aware that even if the top is a tiny bit brown it's probably over done.

Hot tip! Wrap your cake - still in the tin in cling wrap (saran wrap) approx 10 mins after taking it out of the oven. The more your cake cools at room temp, the more moisture it loses. This is a game changer! ⚡️☺️

I made 1/3 of the recipe because I didn't need that much cake and served it without frosting. It's so good! The little bit of almond extract really does give the cake some identity and the cake flour (1st time using it) made it super soft and fluffy. It does feel a bit dry without frosting, so having it with some milk or tea is nice. The one thing that went wrong was taking it out of the pan. My Pam spray didn't work very well for this delicate cake. Next time I will definitely add some parchment. Thanks for the recipe!

Not sure if anyone would read this, but I made this cake with King Arthur's Gluten Free Flour and it tastes AMAZING. Can't tell it's gluten free. I don't recommend using Bob's Red Mill GF flour for this one. But if anyone with gluten allergies wanted to know if this bakes well as GF, it does!

Just wanted to say I made this and it was incredible!!!! It was honestly the best cake I have ever had, and knowing I made it myself felt so cool. I did use a simple buttercream recipe for the frosting instead (I don’t love creamcheese frosting) but the actual cake was so moist and lovely. Highly recommend!

@harunomicchiru that's exactly what I did too! the batter was gritty (visually) and it came out of the oven looking like a cornbread muffin 😳 the sprinkles all sunk to the bottom. It was a huge fail. I'm going to be on the hunt for cake flour and I'll try again.

Instead of cake flour, I've typically used a mixture of all purpose flour and corn starch and it has worked great! So I'll take one cup of all purpose flour, remove two tablespoons, then add two tablespoons of corn starch to make one cup of "cake flour".

Spent all day making this (went to 6 different grocery stores to get the right sprinkles), followed the recipe to a t (I’ve been baking for 20 years and do so weekly) and I threw the cake away. It was dense and tasted raw. The cake was way too heavy for a cream cheese frosting to hold up. The 1 cup recommended in between layers kept oozing out (as it does in the video too) and I had to put a dowel in to keep it from sliding. And the tang of cream cheese felt off with confetti cake even if it had baked properly. So disappointed. Would not recommend. And it makes so much cake I felt so wasteful but I wouldn’t serve it to anyone
